1. Season chicken well (onion, garlic etc.). 2. Melt sugar in oil until bubbling rapidly (don't burn!). 3. Add chicken one piece at a time to melted sugar/oil mixture, turning often until well coated and browned. 4. Add potatoes and carrots. 5.
