Turkey Koftas


1. Preheat the broiler just before cooking and line the broiler rack with tin foil.

2. Place all the ingredients in a food processor and whiz for 1-2 minutes or until the mixture comes together. (Or knead the mixture in a mixing bowl until it forms a ball in the centre of the bowl.).

3. Divide the mixture into 8 then carefully mould round 8 soaked skewers, pressing the mixture firmly onto the sticks.

4. Brush the koftas with a little of the oil then place on the foil lined broiler rack and cook under a preheated broiler for 8-10 minutes, or until thoroughly cooked. Alternatively cook on a BBQ for the same amount of time.

5. Turn occasionally during grilling and brush with a little of the oil as necessary.

6. Serve with a Greek salad and crusty bread.
