1. Heat oil in a medium, non-stick saucepan over medium heat. 2. Add ginger and garlic -- cook and stir for one minute. 3. Add rice and cook for one more minute. 4. Stir in the coconut milk, 2 1/4 cups of water, honey, lemon zest and salt. 5. Bring to a boil then reduce heat to medium low. 6. Cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. Fluff rice with fork and serve. ---------------------------------------------------------------------------
