1. Saute onion, rotel, spices and chicken in a bit of the oil until hot. (I use a rotisserie chicken from the supermarket and I like to slice fresh mushrooms in to this mixture also). 2. Spread some sour cream on 5 tortilla shells. I like it kind of thick. 3. Spread the chicken and vegetable mixture, I use quite a bit. 4. Sprinkle with cheese then top with another tortilla shell. Mash it down. 5. Fry them in a bit of vegetable oil in a nonstick skillet for a couple of minutes on each side. ---------------------------------------------------------------------------
