1. Add oil to saucepan over low heat. 2. Melt butter in pan. 3. Add garlic to pan, do not allow to brown. Allow to cook for two minutes. 4. Add cream, salt, and pepper to mixture, increase heat so that mixture barely reaches a simmer. 5. Stir and incorporate cheese slowly, 1/3 total at a time. 6. Continue to simmer about 10 minutes. 7.
