1. scald tomatoes. 2. remove skin. 3. cut into small pieces removing seeds 4. season cutlet, i think you could use beef here,with salt pepper and sprinkle with a little flour 5. fry in some butter over medium fire 10 to 15 minutes 6. or until tender and browned 7. do not cover 8. when cooked remove cutlets to a hot dish pour wine in pan add tomatoes and cook slowly 10 minutes 9. add chopped chives 10. and butter 11. heat only until butter is melted 12. serve over cutlets. ---------------------------------------------------------------------------
