Vegetarian Baked Pumpkins


1. Pre-heat oven to 180.C.

2. Cut 1/3 off the top of each pumpkin and scoop out seeds, level off the base slightly so they sit flat.

3. Wrap pumpkins in foil and bake for approx 20 minutes.

4. Combine remaining ingredients and mix well.

5. Fill pumpkins with bean mixture & cover again with foil.

6. Return them to the oven and bake for approx 40 mins or until pumpkins are tender.
