Veggie Fajitas


1. Heat oil in skillet or wok over medium-high heat until hot.

2. Add sliced bell peppers and onion.

3. Cook until crisp but tender (about 3 minutes).

4. Add corn, tomato, salt, and pepper.

5. Cook until heated thoroughly.

6. Place approximately 1/2 cup of veggie mixture in each warmed tortilla and fold.
