1. Cut the chicken into match stick like pieces.

2. Toss with 2 teaspoons cornstarch, soy sauce and 1 tablespoon oil.

3. Let stand 10 minutes.

4. Mix remaining cornstarch with mushroom liquid.

5. Add remaining oil; heat.

6. Add chicken, garlic, and ginger.

7. Cook for 1 minute, stirring constantly; do not let the chicken brown.

8. Add mushrooms.

9. Add liquid.

10. Cook for 5 minutes until thickened; do not overcook.
