Very Tasty Mexican Chicken Casserole


1. Line a large (mine is 13"Lx9"Wx2 1/2"D) glass dish with Doritos(I use a lot). Mix the milk and stock and pour over the chips and let sit for 1 hour.

2. Layer the chicken over the chips, followed by the bell pepper, onion, garlic powder and chili powder. Top with lots of cheese.

3. Next mix the cream of mushroom and cream of chicken soups with the can of corn. Spread over the cheese.

4. Next add the rotel without draining, top with the remainder of the cheese and bake at 350 degrees for 45 minutes or until the cheese starts to brown.
