1. Cook pasta according to pack instructions. When there is 5 minutes of cooking time remaining add the squash.

2. Heat half the oil in a pan. Fry pine nuts until they start to colour. Add garlic and soften for a minute. Add rest of oil and increase heat. Fry mushrooms for 2 - 3 minutes Add spinach and wilt.

3. Drain pasta and squash and add to pan. mix well.

4. Serve topped with cheese and chillies.
