Walnut Cake (Karithopeta)


1. Preheat oven to 350F Grease a 9 x 13-inch baking pan.

2. Mix flour, baking powder, baking soda, cinnamon and lemon zest together.

3. Add oil and blend.

4. Mix in remaining ingredients, one at a time, until well blended.

5. Spread batter into prepared baking pan.

6. Bake 1 hour, or until toothpick inserted comes out clean.

7. Cool completely in pan on wire rack. Dust with powdered sugar and cinnamon if desired. Cut into squares and serve.
