1. Mix lemon juice and crushed garlic together. Add oil and whisk thoroughly. 2. Add chickpeas, salt, and pepper. 3. Slice zucchini into 1/2-inch rounds. 4. Blanch zucchini by bringing a pot half filled with water to a boil and add zucchini. Let water come back to a boil and simmer for 1 to 2 minutes. 5. Drain and toss in dressing. 6.
