1. Heat oil in pan over med-high. 2. Pat dry the fillets (prevents soggy fish). 3. Fry fillets 2-3 minutes and turn over for another 2-3 minutes, or until done to your taste. 4. Add soy sauce and sesame oil and gently turn to coat both sides. 5. Place on serving platter, pour hot oil/soy from pan over fish, scatter with sesame seeds and then scatter scallions. ---------------------------------------------------------------------------
