1. Add oil to hot pan, add both chilli flakes and garlic and fry for 20 seconds until garlic is brown and oil is fragrant. 2. Reduce heat to medium and add passata and all other ingredients. 3. Reduce heat to low and simmer for 1 hour minimum, the longer the better! 4. This sauce is great with meatballs! Very versatile and can be adapted to suit your tastes. maybe add a splash of white wine.
