1. Season fillet with oregano, salt and pepper. 2. Heat oil in a large pan; saute onions, garlic and carrots for 3 minutes over medium high heat; sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes. 3. De-glaze with chicken broth, lemon juice and rind and white wine. 4. Place peppercorns, salmon on top cover and simmer over low flame for 7 minutes.
