Zaru Soba - Chilled Japanese Noodles


1. Combine dashi, shoyu, mirin and vinegar in a pan and bring to a simmer.

2. Remove from heat and store in refrigerator to chill.

3. Bring litre of water to boil.

4. Add soba noodles.

5. Cook for 4 mins.

6. Drain noodles using a colander.

7. Rinse with cold water and wash noodles, making sure all the starch is rinsed off.

8. Cut nori sheet in four.

9. Take one quarter and slice thinly.

10. Place slices of nori on noodles.

11. Slice spring onion and place on a small dish.

12. Put wasabi paste on another small dish.

13. Serve noodles on a bamboo mat traditionally, or just use a plate, with the dipping sauce and condiments in separate bowls.

14. Combine desired condiments into the sauce.

15. Dip noodles in sauce and eat!
