1. Wash, trim and pound chicken to 1/4 inch thickness. 2. Combine chicken and marinade ingredients in a large plastic bag and let marinate for 1 hour or overnight in the refrigerator. 3. Combine peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic and cayenne in a saucepan over medium heat, stirring constantly for 15 minutes or until thickened. 4. Whisk in stock and cream and cook one more minute. 5. Remove from heat. 6. Preheat grill and place chicken on HOT grill. 7. Cook for about 5 minutes on each side (only turn once). 8.
