Zucchini Couscous

Zucchini Couscous


1. Dice zucchini (pieces should be about 1/4 inch) and cook in oil in a large skillet with cumin, salt and pepper over medium heat, stirring, until the zucchini is tender (about 5 minutes or so).

2. Add water and bring to a boil, then add couscous and remove from heat. Cover and let stand for about five minutes, then fluff with a fork and serve.
