1. Slice the tomatoes into thin strips. 2. Place in a bowl with warm water. 3. Allow to stand 20 minutes. 4. In a large frying pan, heat the oil and stir in the onion. 5. Cook over low to moderate heat until it softens but does not brown. 6. Stir in the garlic& zucchini. 7. Cook for about 5 minutes. 8. Stir in the tomatoes and their soaking liquid. 9.
