食材份量 Ingredients

雞髀480克/ 300克雞肉 480g Chicken drumsticks / 300g chicken
煙肉30克 30g Bacon
洋蔥180克 180g Onions
蘑菇80克 80g Mushrooms
紅黃西椒各半隻 Red & yellow bell pepper (half each)

醃雞肉材料: Chicken marinade:

胡椒粉半茶匙 1/2 tsp white ground pepper
鹽3/4茶匙 3/4 tsp salt
糖半茶匙 1/2 tsp sugar
薑汁1湯匙 1 TBS Ginger juice
雪利白酒1湯匙(紹興酒代替) 1 TBS Sherry/Shaoxing wine

生粉水: Potato starch slurry:
兩茶匙生粉加1湯水 2 tsp potato starch + 1 TBS water

白汁材料: White sauce:

全脂牛奶250毫升 Whole milk 250ml
清雞湯200毫升 Chicken stock 200ml
麵粉30克 Plain flour 30g
無鹽牛油40克 Unsalted butter 40g
糖半茶匙 1/2 tsp sugar
鹽半茶匙 1/2 tsp salt
黑胡椒碎半茶匙 1/2 tsp black coarse pepper
月桂葉兩片 2 bay leaves
