Three quick recipes you can make with potato, jeera aloo, ajwaini aloo, and masala aloo.

Jeera Aloo
Ingredients Quantity
Ghee 2 tbsp
Asafetida ½ Tsp
cumin seeds 1 1/2 tsp
green chilli chopped 3-4
potatoes boiled 3

Method
Heat ghee in a pan and add, asafetida, cumin and sauté for 1 mins.
add green chilli chopped and mix well.
crush potatoes in the pan,
add salt and mix well
Transfer to a serving bowl and serve hot

Ajwani Aloo
Ingredients Quantity
ghee 2 tbsp
red chilli whole 4
carom seeds 1 ½ tsp
ginger juliennes 1 inch
asafetida ¼ tsp
potatoes boiled 3
red chilli powder 1 tsp
dry mango powder 1 1/2 tsp
turmeric powder ¼ tsp

Method
heat ghee in a pan add red chilli, carom seeds, ginger juliennes, sauté for 1 mins.
asafetida and mix well.
crush potatoes in the pan and mix well.
add red chilli powder, dry mango powder, turmeric powder and mix well.
transfer to a serving bowl and serve hot.

Masala Aloo
Ingredients Quantity
oil 2 tbsp
cumin seeds 1 tsp
onion chopped 2 large
ginger garlic paste 1 tbsp
tomatoes chopped 2 large
salt to taste
green chilli chopped 2
coriander powder 1 ½ Tbsp
red chilli powder 1 tsp
turmeric powder ½ tsp
cumin powder ½ tsp
garam masala powder 1 tsp
water ½ cup

Method
heat oil in pan add cumin and sauté for 1 mins.
Add onion chopped and sauté for 3-4 mins
Add ginger garlic paste and sauté for 2-3 mins
Add tomatoes and sauté for 2 mins
Add salt, green chilli chopped, coriander powder , red chilli powder, turmeric powder, cumin powder, garam masala powder and mix well.
Sauté for 3-4 mins or until oil separates the mixture.
Crush potatoes and mix well
Add water 1/2 cup and mix well.
Add coriander chopped and mix well
Transfer to a serving bowl
Garnish with coriander sprig and serve hot.
