Make a batch in your home kitchen today!AAGRI KOLI MASALAIngredients1 tsp poppy seeds1 tsp mustard seeds1 tsp caraway seeds1 small piece rock asafoetida1 small piece of dried whole turmeric, chopped½ cup coriander seeds1 inch cinnamon stick2 tsps black peppercorns1 tsp tirphal 1 tsp cobra saffron (naag kesar)1 tsp cloves7-8 green cardamoms¼ piece nutmeg, crushed1 black cardamom2 star anise1 mace blade, crushed1 gram stone flower (dagadphool)2 bay leaves10-15 Kashmiri dried red chillies10-15 pandi dried red chillies10-15 bedgi dried red chilliesMethod1. Dry roast poppy seeds, mustard seeds, caraway seeds, asafoetida, and whole turmeric for 1-2 minutes. Transfer on to a plate and allow to cool.2. Dry roast coriander seeds, cinnamon stick, black peppercorns, tirphal, cobra saffron, cloves, green cardamoms, nutmeg, black cardamom, star anise, mace, stone flower and bay leaves till fragrant. Allow to cool.3. Dry roast Kashmiri dried red chillies in a kadai for 1-2 minutes. Transfer in a large bowl and allow to cool.4. In the same kadai, dry roast the pandi dried red chilies for 1-2 minutes. Transfer in the same bowl and allow to cool.5. Similarly, dry roast bedgi dried red chillies in the same kadai for 1-2 minutes. Transfer in the same bowl and allow to cool. 6. Transfer the roasted spices into a blender jar and blend to a coarse powder. Add the dried red chillies and blend further to a fine powder.7. Sift the masala into a bowl and store into an air tight container. Use as required.
