For the first episode of 2017, Aaron's China Guide brings you a tasty Sichuan and Chongqing snack food. Suan la fen 酸辣粉 means hot and sour sweet potato noodles. They have peanuts, cilantro, and bean sprouts. In their raw form, these are sometimes known as purple noodles. Ci Qi Kou 磁器口 or any street food area is a good place to go if you want to see these noodles made from scratch. They make a purple paste that drips through holes and into the water to form the sweet potato noodles. These are some of the best tasting Chinese noodles around.
