Khaana aur Gaana with Bhajan Sensational Anup Jalota where we cook Baigan ka Bharta in the usual way but present it in a very unusual manner!Baigan BhartaIngredients:1 medium Eggplant6 Garlic Clove1 Cup Onion, chopped½ cup Tomato, chopped2 tbsp green chilies, chopped2 tsp Turmeric Powder2 tsp Red Chili powder2 tsp Cumin Powder2 tsp Coriander Powder½ Coriander leaves, chopped½ cup Mustard oilSalt to tasteDressing:2 Ajwain Parathas½ cup Hung Curd½ cup Cucumber, Grated3 tbsp Mint Leaves, crushedMethod:1. Make 6 cuts to the eggplant and insert the garlic cloves inside the cuts. Bake it for 20-25 minutes on 180 degrees.2. Peel out the skin of the eggplant and crush it. 3. Heat oil in a pan, add onion and sauté it till pink now add green chilies and tomatoes mix well.4. Cook until the tomatoes are pulpy. 5. Now add Turmeric powder, Red Chili powder, Cumin powder, and Coriander powder, salt to taste and mix well. Garnish with chopped coriander leaves. 6. Take ajwain paratha with the help of cookie cutter cut it into different shapes. 7. For making the dressing in a hung curd add grated cucumber and crushed mint leaves, mix well.8. Place the prepared baigan bharta on each of the cut ajwain paratha and top it with the hung curd dressing.
