Gram flour cooked with a spicy tempering and tomatoesACHARI BESANIngredients5 tbsps gram flour (besan)6 tbsps oil1 tsp fenugreek seeds (methi dana)½ tsp asafoetida 1 tsp mustard seeds1 tsp onion seeds (kalonji)1 tsp black sesame seeds (kale til)1 medium onion, finely chopped 3-4 spring onions with greens, bulbs and greens finely chopped separately4 medium tomatoes 1 tbsp ginger-garlic pasteSalt to taste2 tsps red chilli powderMethod1. Heat 2 tbsps oil in a non-stick pan, add fenugreek seeds, asafoetida, mustard seeds, onion seeds and black sesame seeds and let them splutter. Add onion, spring onion bulbs and sauté till translucent. Add ginger-garlic paste and mix well. 2. Cut tomatoes into big cubes. 3. Add gram flour to the pan and saute for 2-3 minutes. Add remaining oil and mix well. Saute on high heat, stirring continuously, till the gram flour starts to change color and becomes fragrant. 4. Add tomatoes and mix well. Drizzle 2 tbsps water in the pan and mix well. Add salt and red chilli powder and continue to cook for 10-12 minutes, stirring often. 5. Add spring onion greens and mix again.
