This sandwich is stuffed with a masaledar paneer gravy and topped with some carrots. You need to try it ASAP!

ACHARI PANEER SANDWICH

Ingredients

300 grams cottage cheese (paneer), cut into batons
1 bread loaf
1 tsp cumin seeds
1 tbsp coriander seeds
2 dried red chillies
¼ cup roasted peanuts
2 tbsps white sesame seeds
1 inch ginger
8-10 garlic cloves
2 tbsps oil
2 tsps panch phoran
8-10 curry leaves
1 cup onion puree
½ tsp Tata Sampann Turmeric Powder
Salt to taste
2 tsps tamarind pulp
1 tsp grated jaggery
1 tbsp chopped fresh coriander
Carrot strips for garnish
Coriander sprig for garnish
French fries for serving
Lemon wedge for serving

Method

1. Dry roast cumin seeds and coriander seeds in a nonstick pan till fragrant.
2. Add dried red chillies, roasted peanuts, white sesame seeds and continue to roast for a minute more. Take the pan off the heat and allow to cool.
3. Transfer the roasted mixture in a blender jar, add ginger, garlic, ½ cup water and grind to fine paste.
4. Heat oil in a nonstick pan. Add panch phoran and sauté for a few seconds. Add curry leaves, onion puree and sauté till golden brown.
5. Add Tata Sampann Turmeric Powder and mix well. Add the prepared paste and mix well. Add salt and mix well. Sauté for 2-3 minutes.
6. Add1 cup water and mix well. Cover and cook on medium heat for 4-5 minutes.
7. Add tamarind pulp, jaggery and mix well. Add paneer and mix with light hands.
8. Add coriander and mix well. Cut the bread loaf from centre without cutting through.
9. Stuff the cottage cheese stuffing. Garnish with carrot strips, coriander sprigs and serve hot with French fries and lemon wedge.
