AFGHANI KEBAB

Ingredients

300 grams mutton mince
1 tbsp coriander seeds
10-12 black peppercorns
4-5 cloves
4-5 green cardamoms
2 dried red chillies
½ tsp sea salt
1 inch cinnamon stick
1½ tbsps olive oil
2 small white onions
1 tsp garlic paste
1 tsp ginger paste
Salt to taste
Oil for spraying
3 medium tomatoes
Afghani naan to serve
Cucumber slices to serve
Lemon wedges to serve

Method

1. In a mortar and pestle, add coriander seeds, black peppercorns, cloves, green cardamoms, and dried red chillies. Add sea salt and cinnamon stick. Coarsely grind them. Add olive oil and mix well.
2. In a large bowl, add mutton mince, grate onions and add the prepared spice blend.
3. Add garlic paste, ginger paste and salt. Mix well.
4. Dip your fingers in water and take a portion of the mixture and press it on a flat skewer to form kebab.
5. Preheat the oven at 180˚C.
6. Spray a baking tray with oil and place the prepared kebabs on it. Skewer tomatoes on a satay stick.
7. Bake for 15-20 minutes. Take them out of the oven.
8. Place the kebabs on Afghani naan and serve hot with prepared tomatoes, cucumber slices and lemon wedges.
