'Allam' means ginger in Telugu and 'pachadi' means achar. Try this adraki achar with your meals & turn them exciting!

ALLAM PACHADI

Ingredients

100 grams ginger, peeled
2 tbsps oil
2 tsps cumin seeds
1 tsp mustard seeds
½ tsp fenugreek seeds
2 tsps split skinless black gram (dhuli urad dal)
2 tsps split Bengal gram (chana dal)
10-15 curry leaves
1 tbsp coriander seeds
4-5 dried red chillies
1 tbsp tamarind pulp
Salt to taste
Uttapam for serving

Method

1. Roughly chop ginger. Heat oil in iron kadai. Add cumin seeds, mustard seeds, fenugreek seeds, urad dal, chana dal, curry leaves, coriander seeds and sauté for a few seonds.
2. Once mustard seeds start to splutter, add dried red chillies, ginger and mix well.
3. Add tamarind pulp and mix well. Add ½ cup water and mix well.
4. Add salt and mix well. Cook for 5-6 minutes.
5. Allow to cool down and crush coarsely.
6. Serve with uttapam.
