Heat oil in a non-stick pan. Add cumin seeds and sauté till seeds change colour. 2. Add garlic and mix. Add onion, mix and sauté till it turns translucent. 3. Add potatoes, mix, cover and cook for 2 minutes. Add brinjal and mix well. 4. Add tomato and mix. Add salt, chilli powder, turmeric powder and coriander powder, mix well, cover and cook till the vegetables are tender. 5.
