Very popular with the vegetarians, this frankie is easy to make at home.ALOO CHEESE FRANKIEIngredients4 medium potatoes (aloo), boiled, peeled and mashed 20 grams processed cheese 4 refined flour (maida) chapattis1 tablespoon oil 1 teaspoon cumin seeds (jeera)1-2 green chillies, finely chopped ½ teaspoon red chilli powder ½ teaspoon coriander powder½ teaspoon cumin (jeera) powder ½ teaspoon frankie masala + for sprinkling Salt to taste 1 tablespoon chopped fresh coriander leaves + for sprinkling 4 tablespoons Schezwan chutney 2 teaspoons vinegar Method1. Heat oil in a non-stick pan. Add cumin seeds and let them crackle. Add green chillies and potatoes and mix well. 2. Add chilli powder, coriander powder, cumin powder and frankie masala, mix well and cook for 2-3 minutes. 3. Add salt and mix. Add coriander leaves, mix well and cook for a minute. Remove from heat and set aside. 4. Heat a non-stick tawa. Place chapattis one by one and roast till lightly browned from both the sides. 5. Spread 1 tablespoon Schezwan chutney and a generous portion of cooked potato mixture on top. Sprinkle some coriander leaves, frankie masala and drizzle ½ teaspoon vinegar. Grate in 5 grams cheese, roll and let the cheese melt slightly. 6. Serve hot with tomato ketchup.
