Aloo Dum recipe in Hindi also known as Indian Potato Curry is a very popular Indian Vegetarian Recipe for Lunch and Dinner. We have made this Restaurant style Dum Aloo. Full recipe: https://www.mintsrecipes.com/dum-aloo-recipe-kashmiri-shahi-aloo-dum/Ingredients:400 gm boiled baby potatoes½ cup tomato puree½ cup CurdSalt to taste½ tsp of turmeric powder1 tsp coriander powder1 ½ tsp Red chilly powder1 tsp cumin powder¼ tsp garam masala1 tsp kasturi methiChopped coriander leaves to garnish11/2 tbsp Oil for shallow fryTo roast & grind2 medium sized chopped onion10-12 pieces of CashewChopped ginger2 piece Green chilly10 piece of GarlicTo Temper:2 tbsp Butter1 tsp oil½ tsp cumin seeds1 bay leaf1piece cinnamon stick2piece of green cardamoms2 piece of clovesHow to make dum aloo:1. Heat oil in a pan and sauté onion, garlic, ginger,cashew, green chilly and cook till the onion becomes translucent and soft.2. Grind the onion mixture into a smooth paste when it becomes cool. Add little water if required.3. Put potatoes in a bowl. Add salt, turmeric powder and mix it well.4. Heat oil in the same pan and shallow fry the potatoes until light brown around the edges. Make sure you keep it turning in between to ensure even browning. Remove it to a plate and keep it aside.5. Heat butter and 1 tsp oil in a kadhai, add cumin seeds, bay leaf, cloves, cinnamon and cardamom and sauté on a medium flame for few seconds.6. Put onion paste, 1 tsp of red chilly powder and mix it well for a minute7. Add turmeric powder,coriander powder, cumin powder, ½ tsp red chilly powder and mix it well.8. Stir continuously for 4-5 minutes or until oil starts to separate.9. When the mixture starts leaving the pan add tomato puree, salt and sauté for 2, 3 minutes. Be careful while adding salt. We have added salt while cooking potatoes.10. Put blended curd and mix it well on low flame.11. When the mixture starts boiling cover the lid and cook for another 2 minutes.12. Open the lid, add kasturi methi, garam masala and mix it well.13. Now add shallow fried potatoes and mix it well with the mixture.14. Add water as per your liking consistency of gravy and let it come to a boil. Turn off the heat and transfer to a serving bowl.15. Garnish with chopped coriander leaves and serve hot.
