Aloo Gavar Sabzi | Sanjeev Kapoor Khazana

Potato cubes cooked with cluster beans in mild masala. A common sabzi made in Indian households.

ALOO GAVAR SABZI

Ingredients

2 medium potatoes, peeled
200 grams cluster beans (gavar)
1 tsp cumin powder
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander powder
1 medium onion, chopped
2 tbsps oil
½ tsp mustard seeds
½ tsp cumin seeds
¼ tsp asafoetida
Salt to taste
½ tsp chopped jaggery
2 tablespoon scraped fresh coconut + for garnish

Method
1. Cut potatoes into medium sized cubes. Put them in a bowl of water and keep aside.
2. Break the cluster beans into 1 inch pieces and transfer into a bowl. Add cumin powder, red chilli powder, turmeric powder, coriander powder, chopped onions and potatoes.
3. Heat oil in a nonstick pan. Add mustard seeds and let them splutter. Add cumin seeds and asafoetida. Once the cumin seeds begin to change colour add the vegetable mixture and mix well.
4. Add salt and jaggery and sauté for a minute. Add ½ cup water and mix well.
5. Cover and cook for 8-10 minutes or till the potatoes are soft. Add scraped coconut and mix.
6. Transfer into a serving bowl. Garnish with remaining fresh scraped coconut and serve hot.
