ALOO GOBHI

Ingredients

2 medium potatoes (aloo), peeled and cut into 1 inch pieces
20-25 small cauliflower florets (gobhi)
2-3 green chillies
8-10 garlic cloves
1 inch ginger
3 tbsps oil
1½ tsps cumin seeds
1 medium onion, sliced
1 large tomato, chopped
Salt to taste
1½ tsps red chilli powder
2 tsps coriander powder
¼ tsp turmeric powder
1 tbsps chopped fresh coriander leaves
2 tsps lemon juice
¼ tsp Punjabi garammasala powder
Fresh coriander sprig for garnish

Method

1. Coarsely grind green chillies, garlic cloves, and ginger in a mortar and pestle. Set aside.
2. Heat oil in a kadai, add cumin seeds and let them change colour. Add the ground paste and sauté for a minute.
3. Add onion and sauté till translucent. Add tomato, mix and cook for 2-3 minutes or till soft and pulpy.
4. Add cauliflower and potatoes and sauté well.Add salt, red chilli powder, coriander powder, turmeric powder, and mix well.
5. Add ½ cup water, mix, cover and cook for 12-15 minutes.
6. Add coriander leaves, lemon juice and Punjabi garammasala powder, mix and take the kadai off the heat.
7. Transfer aloogobhi in a serving bowl, garnish with coriander sprig and serve hot.
