ALOO KEEMA MASALA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Ginger Garlic Paste
5-6 no. Garlic cloves,
inch Ginger, peeled,
2 no. Green chillies (less spicy & broken into half)

For Aloo Keema
2-3 tbsp Oil,
400 grm Mutton bones,
1 kg Mutton mince,
Prepared Ginger Garlic paste,
Salt to taste,
1 tbsp Coriander powder,
tsp Turmeric powder,
1 tsp Degi red chili powder,
tbsp Tender Coriander stem, roughly chopped,
4 medium Onion, sliced,
Warm water as required,
1 cup Curd, beaten,
1 cup Water,
3-4 medium Potatoes (peeled & cubed)
4-5 no. Green chilies (less spicy & chopped)
2 tbsp Coriander leaves, chopped,
2 tsp Prepared Masala,

For Chutney
1 medium Tomato, roasted,
2 Green chillies, roasted,
1 heaped tbsp Dry pomegranate seeds,
Salt to taste,
1 tsp Sugar,
1 tsp Oil,
few Mint leaves,
inch Ginger (peeled & roughly sliced)
cup Coriander leaves,

For Masala
1 tsp Cumin seeds,

12-15 Black peppercorns,
6 no. Black cardamom,
6 no. Cloves,
inch Cinnamon stick,
Salt to taste,

For Garnish
Coriander sprig,
Onion roundels,
Lemon wedge,
Prepared Chutney,
Pomegranate pearls,

Process
For Ginger Garlic Paste
In a mortar pestle, add garlic, ginger, green chili and make a coarse paste.
Keep it aside for further use.

For Aloo Keema
In a lagan or handi, add oil, once it's hot, add mutton bones and saute it on high flame for 8-10 minutes or until golden brown in color.
Add mutton mince, prepared ginger garlic paste, salt to taste, coriander powder, turmeric powder, degi red chili powder, tender coriander stems, onions and mix it well.
Cover it with a lid and add water on the top, cook it for 10-15 minutes on moderate heat or until partially cooked.
Add water, curd and mix it well. Cover it with a lid and cook it for 7-8 minutes on moderate heat.
Add water, potatoes and cover it with the lid, simmer it for a while on moderate heat.
Add coriander leaves, green chili, prepared masala and mix it well
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti or chapati and prepared chutney.

For Chutney
On a gas range, place a cooking rack, tomato, green chili and roast them well.
In a bowl, add roasted tomato, green chili, dry pomegranate seeds, salt to taste, sugar, oil, mint leaves, ginger, coriander leaves and transfer it into a mixer grinder jar.
Grind it into a smooth paste and Keep it aside for further use.

For Masala
In a pan, add cumin seeds, black peppercorns, black cardamom, cloves, cinnamon stick, salt to taste and dry roast it on moderate heat.
Transfer it into a mixer grinder jar and grind into fine powder.
Keep it aside for further use
