Aloo Lacha Paratha
Ingredients for Dough Preparation:
Wheat flour 2 ½ cups
All-purpose flour 2 ½ cups
Salt 1 tsp
Oil 2 tbsp
Water as required

Ingredients for Potato Mixture:
Coriander seeds (roasted) 1 ½ tbsp.
Cumin seeds (roasted) 1 ½ tbsp.
Potatoes (boiled) 1 kg
Ginger garlic paste 2 tsp
Fennel seeds (crushed) 1 tsp
Red chili flakes 1 ½ tsp
Salt 1 tsp / to taste
Red chili powder 1 tbsp
Garam masala powder 1 tsp
Green chilies (chopped) 2 tbsp
Green coriander (chopped) 2 tbsp
Onion (chopped) 1/2 cup

Ingredients for Paratha:
Prepared dough
All-purpose flour as required
Potato mixture as required
Ghee as required
Oil as required

Directions for Dough Preparation:
1. In a bowl add wheat flour, all-purpose flour, salt, oil, water and knead a smooth dough. Let it rest for 15-20 minutes.
Directions for Potato Mixture Preparation:
2. In a pan heat coriander seeds and cumin seeds separately until they are fragrant. Take off flame and set aside.
3. In a bowl add potatoes and mash them well.
4. Now add ginger garlic paste, fennel seeds, red chili flakes, salt, red chili powder, coriander seeds, cumin seeds, garam masala powder, green chilies, green coriander, onion and mix them well. your Potato Mixture is ready. Set aside.
Directions for Paratha Preparation:
5. Take the prepared dough and divide it into 4 equal parts.
6. Make dough balls of each part and roll them out into flat circle.
7. Spread ghee on it, sprinkle flour over it, and now spread prepared potato mixture evenly.
8. Fold the prepared paratha start from side to the other. Now roll it giving it swiss roll shape.
9. Sprinkle flour again and roll it out into flat circle again.
10. Transfer it onto preheated pan and cook each side until crispy and fully done. Brush oil on each side.
11. Your Aloo Lacha Paratha is ready to serve.
