Presenting waffles in an interesting avatar! This is a savoury version with aloo masala and topped with cream cheese for that extra zing!
ALOO MASALA WAFFLE

Ingredients

3-4 medium potatoes, boiled, peeled and mashed
2 tsps oil
1 tsp cumin seeds
2-3 green chillies, chopped
8-10 curry leaves, shredded
1 medium onion, chopped
Salt to taste
¼ tsp turmeric powder
½ tsp red chilli powder + to sprinkle
2 tsps lemon juice
Crushed black peppercorns to taste
½ tsp sugar
2 tbsps chopped fresh coriander
1 cup refined flour
1 tsp baking powder
½ tsp baking soda
1½ cups buttermilk
Butter for greasing
Cream cheese for piping
Spring onion greens for garnish

Method

1. Heat oil in a shallow nonstick pan. Add cumin seeds and once they start to change the colour, add green chillies, curry leave and mix well.
2. Add onion and sauté till translucent. Add salt, turmeric powder, red chilli powder and mix well.
3. Add lemon juice, crushed black peppercorns and mix well.
4. Add potatoes , sugar, coriander and mix well.
5. Take the pan off the heat and allow to cool slightly.
6. Take refined flour in a bowl. Add baking powder, baking soda, salt and mix well.
7. Add 1 cup buttermilk and whisk well. Add the potato mixture and mix well. Add remaining buttermilk and whisk well.
8. Preheat a waffle iron. Grease with butter, pour the prepared batter and cook for 6-8 minutes.
9. Pipe cream cheese on top. Sprinkle red chilli powder, spring onion greens and serve.
