The easiest sabji you can put together in minutes with the everyday kitchen ingredients- Potatoes and pointed gourd and your masala box is all you need.ALOO POTOLIngredients3 medium potatoes6 medium potol, peeled and cut into half2 tsps oilSalt to taste½ tsp turmeric powder2 tsps panch phoran½ tbsp ginger garlic paste½ tsp coriander powder1 tsp red chilli powder1-2 green chillies½ tsp sugarMethod1. Keep a nonstick pan for heating and cut potatoes in cubes. Add oil to the pan and then add potatoes and potol. 2. Add salt, ¼ tsp turmeric powder and mix well. Cook till potatoes are golden brown in colour. Remove the potatoes and potol in a bowl.3. Add panch phoron to the same pan, sauté for a minute and then add ginger garlic paste, remaining turmeric powder, coriander powder and chilli powder.4. Add the fried potatoes and potol to the pan. Add green chillies, sugar and ½ cup water to the pan. Mix well, cover and cook for 2-3 minutes.5.
