Aloo tamatar ki sabzi is an Indian vegetarian recipe made for lunch and dinner. Tomato and potatoes are used to make this aloo tamatar ki sabzi. Serve with roti, paratha or rice. This Indian potato curry recipe is very easy and all the ingredients can be easliy available at home.Ingredients:6-7 medium sized boiled potatoes3 medium sized tomatoes2 tsp red chilly powder2 tsp coriander powder1 tsp Turmeric powder1 tsp Mango powder1 tsp Garam masala2 tsp salt or as per taste1tsp cumin seed1 tsp grated ginger3 tbsp oil1 tsp Asafoetida2 tsp Kasuri methiFreshly chopped coriander leaves3 tbsp oil1 piece of dry red chilly (broken into two pieces)Whole garam masala:1/2 inch cinnamon sticks3 pieces of cloves2 pieces of cardamomBay leafHow to make Aloo Tamatar ki sabji:Cut boiled potatoes into small pieces and keep aside.Grate tomatoes to make puree and remove the skin. You can also grind tomatoes to make puree.Now add red chilly powder, coriander powder, turmeric powder, salt and half of the kasuri methi (keep rest of the kasuri methi aside for further use), mix it well with tomato puree. Tomato paste is ready.Heat oil in a pan; once the oil becomes hot add whole garam masala and sauté it for few seconds. Now add cumin seeds and sauté till it becomes light brown.Now add broken red chilly, asafoetida, grated ginger and sauté it for few seconds.Now add tomato paste and sauté it on medium flame for 2-3 minutes or till all the spices gets cooked.Now add cut potatoes, mix it well with the spices and sauté it on medium flame for 2 minutes.Add little water, mix it well and make medium thick gravy.
