Tastes fabulous with delicious hot luchis.ALOO TARKARIIngredients3 large potatoes, peeled and cut into ½ inch pieces2 tbsps mustard oil1½ tsps panch phoran2 dried red chillies½ tsp turmeric powder½ tsp red chilli powder½ tsp cumin powderSalt to taste½ tsp sugarMethod1. Heat mustard oil in a non-stick pan, add panch phoran and let the seeds splutter. Break the dried red chillies and add them to the pan. Add the potatoes and sauté well.2. Add turmeric powder, sauté and cook for 3-4 minutes. Add red chilli powder, cumin powder, and sauté well. Cook for 2-3 minutes.3. Add salt, sugar and 2 cups of water, mix well.
