Take pressure cooker, add soaked Kabuli chana, water, bay leaf, black cardamom, cloves, cinnamon stick and salt, close with lid and cook for ½ n hour.For Sweet Chutney:2. Take water in a sauce pan, add tamarind, sugar, Sauf powder, dry ginger powder, amchur powder, red chilli powder, cumin powder, salt, chat masala and carom seeds, mix well and cook for 6-8 min.3. Strain the chutney in bowl and keep it aside.For Green Chutney:4. Take grinder jar, add coriander leaves, mint leaves, ginger chopped, salt, chat masala and water and grind well.5. Remove in bowl add lemon juice and mix well. Keep it aside.6. Add little water in tamarind bowl and keep it aside.For Yogurt Mixture:7. Mix together yogurt and sugar in a bowl and keep it aside.For Potato Mixture:8. Take grated potato in bowl, add chopped ginger, green chilli, salt and corn flour and mix well. 9. Take one portions of potato mixture and roll them into balls and gently press it between your palms and make a round shaped thick tikki.10. Place it on plate; make the same with rest of the mixture.11. Take non stick frying pan; add ghee and shallow fry the tikki from both the side till golden brown in color.For Masala Chole: 12. Heat oil in kadai, add carom seeds, cumin seeds, chopped ginger and green chilli, mix well and sauté for 1 min.13. Add chopped onion, mix well and sauté for 2 min.14. Add chopped tomatoes, salt, red chilli powder, amchur powder, black pepper crushed, coriander powder, turmeric powder and garam masala powder, mix well and sauté for 1 min.15. Add water, mix well and sauté for 3-4 min.16. Add boiled chana, mix well and cook for 10 min.17. Add tamarind water and mix well.18. Add 2 Tbsp of prepared sweet chutney and 1 Tbsp of green chutney and mix well. Keep it aside.19. Take serving plate; add prepared chole, place potato tikki on top of the choley.20.
