Aloo Wadi Ki Subzi | ਆਲੂ ਵਾਦੈ ਦੀ ਸਾਬਜੀ | Sanjha Chulha | Sanjeev Kapoor Khazana

Aloo sabzi cooked with delicious tomato puree and the authentic amritsari wadiyan.

ALOO WADI KI SUBZI

Ingredients

3-4 medium potatoes (aloo), boiled, peeled and cut into wedges
8 amritsari moong dal wadis
5 tbsps ghee
1 tsp cumin seed
1 medium onion, peeled and grated
Salt to taste
1 tsp ginger, finely chopped
½ tsp garlic, finely chopped
2 green chillies, finely chopped
½ tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander powder
2 medium tomatoes, grated
Chopped fresh coriander for garnish

Method

1. Heat 1 tbsp ghee in a non-stick pan, add wadis and cook on low heat till it turns lightly golden brown in colour. Remove in a bowl and set aside.
2. Heat 3 tbsp ghee in pan, add cumin seeds and sauté for 30 seconds till fragrant.
3. Add onion and salt. Cook on medium heat till onion turns brown.
4. Add ginger and garlic. Mix well and sauté till raw aroma goes away. Add chillies, salt, red chilli powder, turmeric powder. Add 2 tablespoons water and combine well. Add coriander powder, mix well and cook on medium to high heat for 2-3 minutes.
5. Add tomatoes and mix well. Cover and cook for 5 minutes on medium heat till oil separates.
6. Add potatoes cut in wedges and moong dal wadis. Mix well and sauté for a minute. Add the remaining ghee and combine well. Cover and cook for a minute on medium heat.
7. Add sufficient water (1 cup) in pan. Cover and cook for 15 minutes on medium heat till potatoes get cooked.
8. Transfer subzi in a serving bowl.
9. Garnish with chopped coriander.
10. Serve hot.
