ALOOR DUMIngredients8-10 baby potatoes, parboiled and peeled1 medium onion, peeled2-3 tbsps mustard oil1 medium tomatoSalt to taste2 bay leaves 1 inch cinnamon stick3-4 green cardamoms3-4 cloves1 tbsp ginger-garlic paste½ tsp turmeric powder½ tsp coriander powder½ tsp cumin powder½ tsp Kashmiri red chilli powder2 tbsps cashew nut paste3 tsps sour yogurt2 green chillies + for garnish½ tsp sugarLuchi to serveFreshly chopped coriander for garnishMethod1. Chop onion and set aside.2. Heat mustard oil in a deep non-stick pan. 3. Chop tomato and set aside.4. Add the potatoes and salt in pan. Mix well and shallow fry the potatoes on high heat till slightly golden brown. Transfer in a bowl.5. Add bay leaves, cinnamon, green cardamoms and cloves. Sauté for a minute. Add onions and sauté for a minute or till golden.6. Add ginger-garlic paste, turmeric powder, coriander powder, cumin powder, Kashmiri red chilli powder and salt. Sauté for 1-2 minutes. 7. Add tomatoes in pan and sauté on medium heat for 1-2 minutes or till they turn pulpy.8. Add cashew nut paste and sour yogurt. Mix well. Break and add 2 green chillies in pan. Sauté on medium heat for 1-2 minutes or till oil separates. Add the fried potatoes. Mix well. Cover and cook for 2 minutes on low heat.9. Add sugar in pan and mix well.10.
