AMARANTH GREENS ON BHAKRIIngredients½ cup amaranth greensSalt to taste¾ cup rice flour1 tablespoon oil1 tablespoon chopped garlic1-2 green chillies, chopped 1 medium onion, finely choppedFresh scraped coconut for garnishingMethod1. To prepare dough, heat ¾ cup water in a non-stick pan. Add salt and bring to a boil. Add rice flour, mix, cover and cook for a minute. 2. Sprinkle some water, mix, cover and cook for a minute. Repeat the process twice. Remove from heat and transfer onto a plate. Add some water and knead into stiff dough. Cover with damp muslin cloth and set aside.3. Heat oil in a non-stick pan. Add garlic and sauté till golden. 4. Add green chillies and onion, mix and sauté till onion turns golden. Add amaranth greens and salt and mix lightly. Remove from heat and set aside. 5. Heat a non-stick tawa.6. Divide the dough into equal portions and flatten them to make small discs. These are bhakris.7. Place the bhakris on hot tawa and roast till evenly golden from both sides. 8. Place bhakris on a serving plate.
