Amritsari Sookhi Dal | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

Amritsari Sookhi dal is a delicious Indian recipe served as a Side-Dish. Your nutritious Amritsari Sookhi Dal can be served along with Boondi Raita and Phulkas for a weekday lunch.

AMRITSARI SOOKHI DAL - (Serves - 4)

Ingredients

1 cup split skinless black gram (dhuli urad dal), soaked for 2-3 hours and drained
1 tablespoon ghee
1 teaspoon cumin seeds (jeera)
1 inch ginger, cut into thin strips
1 green chilli, finely chopped
½ teaspoon asafoetida (hing)
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 teaspoon red chilli powder
½ teaspoon turmeric powder
Salt to taste
½ teaspoon garam masala powder
Juice of ½ lemon
Fresh coriander sprigs for garnishing

Method

1. Heat ghee in a deep non-stick pan. Add cumin seeds and sauté till it changes colour. Add ginger strips and green chilli and sauté for 30 seconds.
2. Add asafoetida and sauté. Add onion and sauté till translucent. Add tomato and sauté till soft.
3. Add split black gram, chilli powder, turmeric powder, salt and garam masala powder and mix well.
4. Add 1½ cups water, mix, cover and cook till split black gram is fully done and the moisture evaporates. Switch off heat, add lemon juice and mix well.
5. Serve hot garnished with coriander sprigs.
