Your nutritious Amritsari Sookhi Dal can be served along with Boondi Raita and Phulkas for a weekday lunch.AMRITSARI SOOKHI DAL - (Serves - 4)Ingredients1 cup split skinless black gram (dhuli urad dal), soaked for 2-3 hours and drained1 tablespoon ghee1 teaspoon cumin seeds (jeera)1 inch ginger, cut into thin strips1 green chilli, finely chopped½ teaspoon asafoetida (hing)1 medium onion, finely chopped1 medium tomato, finely chopped1 teaspoon red chilli powder½ teaspoon turmeric powderSalt to taste ½ teaspoon garam masala powderJuice of ½ lemon Fresh coriander sprigs for garnishingMethod1. Heat ghee in a deep non-stick pan. Add cumin seeds and sauté till it changes colour. Add ginger strips and green chilli and sauté for 30 seconds. 2. Add asafoetida and sauté. Add onion and sauté till translucent. Add tomato and sauté till soft. 3. Add split black gram, chilli powder, turmeric powder, salt and garam masala powder and mix well. 4. Add 1½ cups water, mix, cover and cook till split black gram is fully done and the moisture evaporates. Switch off heat, add lemon juice and mix well. 5.
