A recipe to outrank your usual supper curries and enjoy the meal even more. Anda Malai Masala, hard boiled eggs cooked in flavourful and spicy onion gravy, served best with pavs or paranthes. ANDA MALAI MASALAIngredients4 eggs, hard boiled 2 small onions, peeled3-4 green chillies3 tbsps oil1½ tsps cumin seeds 1½ tbsps ginger-garlic paste Crushed black peppercorns to taste1½ tsps garam masala powderSalt to taste¼ tsp turmeric powder½ cup milk3 tbsps fresh cream2 tbsps freshly chopped coriander leavesCoriander leaves for garnishPavs to serveMethod1. Cut onions in quarters, de-stem green chillies and transfer into a blender jar. Blend to a fine paste.2. Heat oil in a non-stick pan, add cumin seeds and allow the colour to change. Add the prepared paste and mix well. Cook till it turns golden brown, sautéing occasionally.3. Add ginger-garlic paste and mix well. Cook for 1-2 minutes.4. Add crushed black peppercorns, garam masala powder, salt, turmeric powder and ¼ cup water. Mix well, add ½ cup water, mix.5. Cut eggs in half and add them in the pan. Mix well. Add milk and mix well. Cook for 2-3 minutes. 6. Switch the heat off. Add fresh cream and chopped coriander. Transfer into a serving plate, drizzle a little cream on top.7.
