A vegetarian version of the popular recipe from Andhra cuisine.ANDHRA CHILLI PANEERIngredients 250 grams cottage cheese (paneer), cut into cubes 8-10 dried red chillies, soaked8-10 garlic cloves2 inch ginger, roughly chopped2 tablespoons rice Salt to taste1 sprig fresh curry leaves1 tablespoon hung yogurt 2 tablespoons oil Refined flour for coatingSliced spring onion greens for garnishing Method1. Blend together red chillies, garlic, ginger, rice, salt and curry leaves with water as required to a coarse paste.2. Put cottage cheese cubes in a bowl. Add prepared paste, salt and hung yogurt, mix well and set aside for 30 minutes. 3. Heat oil in a non-stick pan. 4. Coat marinated cottage cheese cubes with some flour, add to the pan and fry in hot oil till golden brown from both sides. 5. Garnish with spring onion greens and serve hot.
