Prawns skewed onto satay sticks with green and black grapes, pan cooked and served with grape sauce

ANGOORI PRAWNS

Ingredients

12 medium prawns, shelled and deveined
24 green grapes
44 black grapes
2 tbsps olive oil
1 tsp soy sauce
Salt to taste
½ tsp crushed red chillies
2 tsps honey
1 lemon
12 satay sticks

Method

1. Skew a green grape on each satay stick. Wrap a prawn around a black grape and skew onto the satay sticks after the green grape and end with another green grape.
2. Heat olive oil in a non-stick pan. Halve the remaining black grapes and puree them in a blender. Transfer the puree into a bowl, add soy sauce, salt and crushed red chillies and mix well.
3. Keep the satay sticks in the pan and cook, rotating the sticks for even cooking all around.
4. Sprinkle a little salt over them and cook till just done. Remove and place them in a serving dish.
5. Put the grape mixture into the pan and cook. Add honey and mix. Squeeze the juice of lemon into the sauce and mix.
6. Strain the sauce through a sieve into a small bowl, squeezing the residue to extract all the flavours.
7. Drizzle the sauce over the prawns and serve hot.
