Popular south indian bread made with rice batter and coconut milk served along with vegetable stew.APPAMIngredients 1 cup short grain rice, soaked for 3-4 hours and drained3 white bread slices½ cup cooked rice½ cup scraped fresh coconut 1 teaspoon salt 1 medium onion, peeledOil as requiredGreen coconut chutney for servingMethod1. Place bread slices on a plate. Pour some water on top and let it soak for 10-15 minutes. 2. Grind together rice along with 50 ml water into smooth batter. Transfer in a bowl. 3. Put cooked rice and coconut in the same blender jar. Squeeze out excess water from bread slices, add to blender alongwith 25 ml water and blend into smooth and thick mixture.4. Add the ground cooked rice-coconut mixture to the batter, mix, cover and set aside in a warm place for 6-8 hours to ferment. 5. Heat a cast-iron appam pan. 6. Add salt to fermented batter and mix well. 7. Insert a fork in the onion, dip the onion in some oil and grease the hot appam pan with it. 8. Pour a ladleful of batter in the greased pan and swirl to make a disc. Cover and cook for 2-3 minutes. Transfer on another plate. 9. Serve hot with green coconut chutney.
