The good old Halwa made with fresh red and green apples, loaded with dried nuts makes for an amazing dessert after a heavy meal.APPLE HALWAIngredients2 medium red apples, grated2 medium green apples, grated1 tbsp + 1 tsp ghee⅓ cup sugarA large pinch of saffron2 tbsps slivered almonds+ for garnish2 tbsps pistachios, blanched, peeled and slivered + for garnish½ tsp green cardamom powder½ cup khoyaMethod1. Heat 1 tbsp ghee in a non-stick wok, add grated apples and sauté well. Cook for 15-20 minutes or till the moisture reduces, sautéing occasionally.2. Add sugar, saffron and mix well. Cook till the sugar dissolves completely and till most moisture evaporates.3. Add almonds, pistachios, green cardamom powder, khoya and mix well. Cook for 2-3 minutes.4. Add remaining ghee and mix well. Cook for 1 minute and take it off the heat. Transfer into a serving bowl.5. Garnish with almonds and pistachios.
